Dieting can be a nuisance, having to mess around with special recipes; weighing everything, checking calories etc. So here's a selection of quick and easy diet recipes to make your dieting life easier.

 

Stir-fry Vegetables


stir fry veggiesUsing fresh vegetables there is no need to worry about calorie counting, and you know you are taking in plenty of vitamins and nutrients.


These are easy diet recipes, so the easiest thing is to use whichever vegetables you have at hand.


The best choices are: leeks or spring onions, carrots, celery, asparagus, sweet peppers, spinach or other green leafy vegetables, literally any fresh vegetable you have to hand.


Cut everything into fork-sized strips, add a drizzle of olive oil to your wok or skillet, and when hot, throw in the vegetables, starting with carrots, celery, onions, everything which takes a little longer to cook. Add everything else and toss or stir a few times, seasoning as required. Very quick and easy, healthy and delicious.

 

 

Celery and Asparagus with Blue Cheese and Walnuts


Easy Diet RecipesOne of the more easy diet recipes and one of the most healthy as well as tasty: Cut your celery into bite sized pieces, and the asparagus into two or three pieces depending on their length, separating the spear tips. (These cook very quickly) salt and pepper and add any extra herbs you wish to taste.


You can cook the vegetables one of two ways; Sauté or stir-fry them in olive oil, or poach them in a little water or stock.


Use only enough water to cook the vegetables tender, absorbing most of the liquid. Using too much water which you then have to discard, would mean you are discarding a lot of the nutrients. Add the asparagus spears when everything else has started to soften. Try to keep all the vegetable 'al dente', don't allow them to overcook.


Once cooked, crumble some blue cheese (preferably blue goat's cheese as it is lower in fat) over the top and stir to allow the cheese to melt slightly. Crumble some fresh walnuts over everything, thereby adding not only texture but many more health giving nutrients too.

 

 

 

Stuffed Tomatoes
 

Stuffed TomatoesTake a fairly large tomato, slice off the 'top' or stalk end, then using a paring knife and spoon, (or grapefruit spoon which has a blade on one side) scoop out the flesh and seeds, leaving just the outer flesh and skin. Discard the seeds, but use the remaining flesh and juice with your filling.


Now you can make a filling of your choice i.e. tuna (natural in brine not oil) sweetcorn, chopped apple and rocket. Mix everything together the juicy parts of the tomato, and pack it all into the tomato 'shell'. This makes a great alternative to a salad, or you can also bake it in the microwave if you prefer.


Similar ideas, but which do need baking are stuffed aubergine, stuffed pepper or stuffed courgette.
Another which can be eaten raw is stuffed cucumber.


You can also choose to make a filling with meat, chicken, fish etc if you are baking. Cooked rice can be added to mixtures too, whether eaten hot or cold.

 

 

 

 

Brown Rice Recipe

 

Brown Rice RecipeSimple brown rice with tomatoes and basil is another of the most excellent quick and easy diet recipes:


Cook yourself a good batch of brown rice, and freeze it in portions, for the times when you're in a real hurry.


Take some small cherry tomatoes, or chop larger tomatoes; preferably not too ripe, and some fresh basil leaves.


This dish can be cooked one of two ways:


1. Stir-fry the tomatoes and basil in olive oil, then add the rice and stir everything together until it is heated through.


2. Spread some rice in a shallow pan, and add the tomatoes and basil leaves on top.
The second choice will leave the tomatoes and basil less cooked; just warmed through and crunchier.

 

 

A basic salad can be given added flavour and vitamin content by adding fresh fruit and nuts. Salads are easy diet recipes, but don't have to be bland and boring.


Avocados are an excellent addition to salads and when extra ripe and soft, mashed into a paste, can be used in place of mayonnaise as a dressing or spread on bread.

Avocado with prawns or chicken breast makes another of the easy diet recipes which have plenty of vitamins and nutrients.

 

All it takes is a little imagination to come up with some quick and easy diet recipes of your own, to add variety, taste and nutrition without adding calories.
